The Project

Acme worked with Dean Wilson, owner of Olive Tree, to deliver his ambitious plans of two new restaurants in Lytham & Stockton-Heath. Dean wanted a high-spec kitchen to deliver their menu to a larger number of covers.

Choosing the right equipment was top priority for Dean. He said, "The synergy grills installed across both sites are my favourite pieces of equipment. They have low cleaning requirements, heat up very quickly, get to a very high temperature and use much less gas than alternatives."

Both sites were formally old banks. This gave great character to the restaurants but created a challenging space for the kitchens. Dean said, "The Acme team came up with the kitchen design. Both restaurants were an odd shape upstairs. We had to reclaim roof space in one to fit in the cold room. Acme did a great job of making a very workable kitchen from challenging spaces".

Acme also installed the air conditioning, ventilation and plumbing facilities across both restaurants, as well as the fabricated back-bar, bar equipped and cellar cooling.
